The Best Italian Restaurant in Las Vegas Isn’t Even an Italian Restaurant

When the Bacchanal Buffet opened at Caesars Palace recently, this blog was overwhelmed by the sheer variety of the offerings. Over the course of a typical day, there are about 500 distinct menu items available. Hint: That’s a lot.

To more effectively manage our sense of gleeful overwhelm, we decided to dive headlong (figuratively, as far as you know) into our favorite station, the Italian station.

Of course, calling it a “station” may be doing the Italian station a disservice, because the stations at the Bacchanal Buffet are more like self-contained restaurants, each with its own robust selection of culinary delights, made fresh, often right before your eyes.

An example is our newest favorite buffet dish ever, the individual-sized chicken parmesan. We popped in to chat with the buffet’s Executive Chef Scott Green to learn more about the chicken parm and other offerings at the Italian station.

The aforementioned Chef Scott Green, who also holds a part-time job as this blog's personal hero.

In response to our obvious infatuation with the chicken parm, Chef Green says, “The chicken parmesan is a classic preparation, with thinly-pounded chicken breast, breaded with bread crumbs and Parmesan cheese.”

Even the sauce is house-made. Right there in front of you. So close you could lick it. Which this blog doesn’t recommend. Probably.

The chicken and sauce are then lovingly divided into individual portions, and topped off with shredded mozzarella.

Confirming our suspicions, Chef Green confides, “I’m told the secret ingredient is love!”

One taste, and you’ll know he’s right.

While this blog could make an entire meal out of the chicken parm, that probably defeats the purpose of a Las Vegas buffet.

The Italian station also features penne ala vodka, chicken primavera (with orchiette pasta and basil pesto), veal marsala and chicken marsala, meatballs, baked rigatoni (with spicy Italian sausage), baked beef lasagna (with ricotta), a Risotto of the Day, fried calamari and assorted pizzas from a wood-burning oven.

"Wood-burning oven" was not a figure of speech.

We love the fact new items are being developed and added all the time, at all the stations at Bacchanal Buffet. For example, the risotto, chicken parm and chicken marsala weren’t even on the menu when the Bacchanal Buffet first opened. (A new Lobster Rockefeller is also available for a $15 surcharge.)

Which items do guests seem to like the most? Chef Scott Green says, “People definitely respond best to the classic and childhood favorites, like the lasagna and meatballs on the Italian station. Also, the pizzas from the wood-burning oven are a great touch and people appreciate the fresh approach.”

We are seriously thinking about sending the Italian station flowers and chocolate.

Chef Marty Lopez, the man behind the scenes at the Italian station at Bacchanal Buffet, adds, “It’s been exciting to see our vision as a chef’s team being fulfilled on a daily basis. We genuinely love to create and add new dishes and to see the guest reaction at the Italian station has been very rewarding. The progression of cuisine from opening day to now has been incredible and I’m looking forward to exploring the boundaries even more in the coming weeks.” This blog is a big fan of “exploring boundaries,” especially when it results in new things to add to our list of “Favorite Foods in Las Vegas.”

Oh, no, you did NOT just add a baked basil leaf to this lasagna for flair. Swoon.

Another sign of things to come, Chef Green adds, “I’m very proud of what Chef Marty’s up to, and I can’t wait to see what he brings me next. All of the chef’s team has been working on pushing the envelope in all of the stations, so the next few weeks will bring out some additions to our growing repertoire at Bacchanal Buffet.”

This blog is officially giddy with anticipation. And here’s the nutty part: This is just one of nine stations at Bacchanal Buffet. Just one.

Now, for the damage: The Bacchanal Buffet costs $21.99 for breakfast (weekdays, $10.49 for kids), lunch is $28.99 (weekdays, $13.49 for kids), and dinner is $44.99 ($21.49 for kids). Brunch, on the weekends, with champagne included, is $41.99 ($19.99 for kids) Show your Total Rewards player card (free to join) for discounted pricing. During peak hours, think about a line pass for an additional $15. There’s also an unlimited wine and beer option for $15.99.

    Very disappointed with the Italian food especially the pizza. what happened to that amazing New York pizza you had at the cypress market a year or so ago? Why would you change something so good to what you are serving now. Two thumbs down.
